HI,
Yesterday I spoke with a woman whose 2 year old son was recently diagnosed
with allergies to many foods, to include wheat, peanuts, tree nuts, soy,
rice, and eggs.  I checked the archives for rice allergies and didn't find
much help.  She is trying to figure out how to substitute other flours for
the rice flour called for in recipes.  I told her about Roben Ryberg's
cookbook-The Gluten-Free Kitchen because Roben tends to use corn and potato
starch/flour.  I thought that in the past this list talked about being able
to substitute corn starch for wheat flour in recipes.  She asked me about
bean flours and I remember people saying they liked them, but they can leave
an aftertaste.  But that is certainly another option for her.
My question is, are there others out there with rice allergies and can you
lead me/her to some helpful websites, cookbooks, etc.?
