As one who always had problems with licking stamps many years ago, I simply 
gave up licking and used a sponge, or a non-celiac husband  to dampen the 
glue. The introduction of self-sticking stamps and envelopes was a welcome 
hange.  However,  I followed the discussion with interest. Some countries 
still have stamps that need to be moistened, and I have no way of knowing 
the source of their glues. Isn't glue sometimes made from hooves?

It seems to me that you all have ignored one possibility.  Perhaps there are 
some glues that need to be licked that are NOT made with gluten, and others 
that ARE made with gluten.  I suppose one would have to check with all 
suppliers to make sure what is the adhesive component source in each 
individual company making envelopes.
