the is a great recipe...now that cool dry weather is here, I love making them.  You can use ANY nut butter in place of the pb

Best Peanut Better Cookie
preheat oven to 350

1 cup chunky pb or any nut butter
1 cup white sugar [brown burns]
1 egg
1 teas vanilla

line a jelly roll pan with silpat or parchment paper

combine all ingredients and using a small ice cream scoop, place small dollops of batter on surface.

bake 12 min...do not let brown

remove from oven and let stand for 2 min and then remove to a cooling rack.  let cool, then place in cookie tin with sheet of paper toweling between each layer

make only on a dry day.

try adding a cup of mini choc chips or raisins or chopped candied ginger
