I got this reply from Kacey Bogue of UNO Chicago Grill, after I wrote to them to ask if there was a way to have gluten-free corn chips with the chili. At least, it's an answer. Their menu is rather comprehensive and I expressed gratitude, but it was worth asking.

Your email found us indirectly and we were thankful it did since hearing our guests opinions help us improve.
 
Unfortunately we cannot use new oil for our fryolators every day as the oil which is designed for them is made to be used for longer than a day (helps with the coloring and flavor of the product).  Even just cleaned out every night we still cannot confirm there are no gluten proteins left in the oil.  That being said, even if we change the oil every day, we would not be able to fry GF chips as the chips go stale rather quickly and I don't feel right about offering an inferior product to our GF guests.  They should have the same great tasting food as everyone else. We are continually looking at many other GF products but they need to be great tasting and cost effective.
