look at Deidre Imus' book. I looked at it, thought it was nice.  I think that Amazon still has it and you can look at the table of contents on line.

Vegetarian Cooking for Everyone by Deborah Madison, tells you everything 
about all kinds of vegetables and how to cook them. Preview it at your local 
bookstore.
  
Also go to the nearest Thousand Villages store to preview any of their 
cookbooks, World Community Cookbooks. (Extending the Table, etc.)


My absolute favorites are "The Moosewood Cookbook," and "The  
Enchanted Broccoli Forest."
 
Both are written by Mollie Katzen. I think there is also a third in  
this series -- they all stem from the Moosewood Restaurant in Ithaca,  
NY.

My favorite vegetarian cookbook is Simple Suppers by the Moosewood Collective.  I cook out of it a lot even since I found out I needed to give up gluten.  I use gluten-free pastas and tortillas in place of the wheat versions.  There is a vegetarian reuben recipe that I make without bread.  My husband thinks it is the best meal in the world.

I have loved Mollie Kasten's cookbooks for decades. Moosewook Cookbook is a staple in our house and she has three cookbooks specifically for children (Pretend Soup, Honest Pretzels and Salad People).  We also love a cookbook called Clair's CornerCopia and one called Fresh From the Vegetarian Slow Cooker.


Anna Thomas--any of her vegetarian epicure books, though the New Vegetarian
Epicure is probably more in line with what you're looking for. Very few
unusual ingredients, lots of emphasis on basic good food with tasty twists.

A really good website for information, restaurant reviews and a lot of other info is www.happycow.com.  I looked and at the bottom of their main page is a link to vegetarian cookbooks.  There is also a recipe section on that site listed by types of foods.
