Here are the excellent responses I received for my request for restaurants
and health food stores in the Phillipsburg NJ & Bethlehem,  PA areas.  (I also
asked for Red Bank, NJ, and these replies are  summarized in a separate
e-mail.)  Thanks to all!

From Kate:

There are 3 health food stores in the immediate area.  They are Water  To Go
in Easton (my favorite), Nutrition Herbs and Diet in Easton and Sign of  the
Bear in Allentown... There are Wegman's Grocery stores all over this area  and
they have a gluten free section.

As far as restaurants, there is a Carrabba's in Allentown, a Don Pablos in
Easton and an Outback in Easton and Allentown.  All of these have GF menus
available on the internet.

I also received a nice e-mail from Phil at Water To Go:


Water To Go Diet & Nutrition Center is Located  in Palmer Township (Easton)
right smack in the middle between Bethlehem, and  Pburg.  We have a very large
selection of GF foods.

There is a new Outback Steak House which has a GF  menu in Bethlehem as well.

From Ross, I received info on dining cards that he and a partner developed,
which look very helpful and I will probably order:

If you're having trouble finding a gluten free restaurant, check out
www.triumphdining.com for some excellent dining cards. I'm not usually a dining  card
fan, but these really go above and beyond to clearly explain the important
points and nuances of our diet.

The cards are available covering six  global cuisines, and are customized to
cover the unique pitfalls of each  cuisine. You should be able to use them to
eat almost anywhere you want, whether  the restaurant is already familiar with
the gluten free diet or not.

The  company hasn't officially launched yet, so the site needs a few last
minute  touches (like text edits), but it is living and taking  orders.
