Hi,

Thank you to all who sent  your suggestions: They are as follows:

Make your-own tacos--have all of the fillings

Brownies with toppings such as vanilla ice cream, whip cream,  
chocolate sauce, cherries

Rice pastas and some marinara sauces or a lite herb infused oil with  
flaked or shreded italian parmasan.  You can add some shrimp or  
grilled fish (ahi tuna is my favorite) in to make it more substantial.

Southeast Asian food

For a fancy party I love baked brie served on apple slices - so easy!
Cut the top rind off a hunk of brie, sprinkle the top with a little
brown sugar and sliced almonds.  Bake either in the oven or micro until
just soft (the suger will melt on top).  Serve with thinly sliced apples
(granny smiths go very well)....people can spread the brie on the apple,
rather than crackers.

Other ideas :
cocktail shrimp with dipping sauce;

super nachos - corn chips topped with refried and/or black beans and/or
taco meat, and plenty of cheese - baked in oven or micro and then add
guacamole, sour cream, and salsa;

hummus with rice crackers or carrots for dipping

rice crackers with easy crab dip - dip made of whipped cream cheese,
precooked canned crab meat, and cocktail sauce, blended together.

Rice pasta made into a past salad;  or served warm with pesto.
