I've been doing this gf thanksgiving stuffing thing for quite a few
years and I've found that I've had the best results using stale
cornbread.  I made the recipe on the back of the Indian Head Corn meal
pkg, and let it sit for two days ...I cubed it while it was still warm
and in a pinch, made in fresh, cut it and toasted it in the oven, then
proceeded to use our favorite stuffing recipel I violently dislike the
gf bread and bread crumbs both for texture and taste and find that the
cornbread stuffing works wonderfully.  I've started adding some fresh
whole cranberries to the mix which adds color and  flavor.
