The Ruby Range distinctive blend of flours includes the reintroduction of mesquite flour to the market. For 2000 years, mesquite was a central dietary staple for the Southwest Native Americans. Mesquite meal is extremely effective in controlling blood sugar levels in people with diabetes. Mesquite, offers a good source of protein, dietary fiber, calcium, magnesium, potassium, iron, and zinc. The exceptional flavor of The Ruby Range Mixes is a result of the sweet, nutty, slightly molasses flavor of the mesquite flour.
Nutrition is increased in the mixes by the addition of an ancient organic Ethiopian grain, Teff, now grown in Idaho. The combination of flours results in a texture similar to baked goods made from wheat.

Spicy Cocoa Meringues with Chocolate Cream

Meringues
1 cup powdered sugar
3 tablespoons unsweetened cocoa powder
1 3 / 4 teaspoons Ruby Range Spice Blend
5 - 6 eggs
1 / 2 teaspoon cream of tartar
11 tablespoons sugar
Chocolate Sauce
1/2 cup whipping cream
1 cup GF chocolate chips
1 1/2 cups chilled whipping cream
1 unsweetened cocoa powder
Preheat oven to 200 degrees. Position 1 rack in center and 1 rack in bottom third of oven and preheat to 200°F. Line 2 heavy large baking sheets with parchment paper. Draw 6 3" circles on each sheet.
Mix sugar, cocoa and Ruby Range Spice Blend. Separate eggs in a separate bowl, add cream of tartar.. Using an electric mixer, beat egg whites and cream of tartar until soft peaks form. Add 2 tablespoons sugar and beat whites until firm and glossy. Beat in remaining 9 tablespoons sugar 1 tablespoon at a time, beating well after each addition. Continue to beat until very thick and stiff peaks form.
Spread meringues about 3/ 4 inch thick to fill each circle. Bake until dry and crisp about 2 hours.
Remove baking sheets from oven. Transfer parchment paper with meringues to racks; cool. Peel paper from meringues.
For the Chocolate Sauce bring 1/2 cup cream to boil in heavy saucepan. Remove from heat. Add chocolate and whisk until smooth. Cool completely, whisking occasionally, about 20 minutes.
Using electric mixer, beat 1 1/2 cups cream in large bowl until soft peaks form. Fold in chocolate mixture in a little at a time..
Cover meringues with chocolate cream. Sprinkle with cocoa and serve.
