I thought I would ask the experts (you all) about this odd problem.

Since I have been GF (nearly 3 years now) I have had a terrific improvement
in my digestion, and my biopsy says I am healed internally. My only problem
seems to be cheese--My tummy goes into a tangle when it encounters even a
sprinkling of parmesan.  I tried a rennetless cheese and was tied up with
bloating, terrible digestion and discomfort for the bettter part of a week.

I can use milk, cream, ice cream and yogurt without a problem, but cheese
really does it to me.  I used to love it. I want to use it as a garnish (on
pasta, etc.), not as a meal (grilled cheese sandwich), but I must always
order my food sans cheese.

I thought it was the fat, but I can eat all manner of fats, such as
mayonnaise, egg yolks, fried foods, etc.  Fat digestion is OK for me.

So what is it about cheese?  Does anyone else have this situation?  Are
there enzymes I can take to deal with cheese?  Could it be the molds or
enzymes and such that are used in the cheese production process?
