A few more stray items on mochi:
The best mochi I've had was purchased at the Long's Drug in Lahaina, Maui,
Hawaii. It is made locally in lots of flavors. Delicious!

Mochi is often dusted with a white powder to keep it from sticking. This
is traditionally potato starch or confectioner's sugar. GF!

I bought a cookbook with lots of mochi recipes the last time we were in
Hawaii. It is called 'Hawaii's Best Mochi Recipes' by Jean Watanabe Hee.
I just checked - it is available on Amazon.
