Here's a summary:
Number one bring your own wheat free sauce.
Many suggested buying a 2-3 oz bottle and bring your own. You can also use lemon juice mixed with wasabi, less salty.

As far as the Sushi goes the overall status is GF. Several things to be aware of :
Even if you bring your own you still need to know what brand because several people said they sometimes add sauce to the sushi rice to give it flavor. Some cheap brands of wasabi have wheat among the ingredients, proper pure wasabi should be wheat free. Stay away from the following may be seasoned with soy sauce or contain wheat: fake crab (california rolls), eel, miso soup, the tamago (sweet egg omelet). Last the sake should be o.k. since it is rice wine!
Someone also suggested that authentic thai resturant would be even better.
