Actually, to the best of my knowledge, the North-American celiac groups
seems to be the exception here. Our Dutch national celiac association feels
that - except for a minority of very sensitive individuals - it is OK
to eat e.g. diet wheat starch with a gluten content below the level indicated
by the codex alimentarius. No celiac I know, not even the most sensitive
ones, avoid vinegar or clear alcoholic drinks (except beer) (at least not
because of CD).
To the best of my knowledge most European support groups have about the same
policy (with the possible exception of Italy).
I am very glad with Don Kasarda's effort to stress that there are more options
than going for 100.000000000000000000000000000000000000000 % GF.  Otherwise
I almost would have started to belief that everyone over here is irresponsible.
