I must admit that of course, I would rather not be on this diet.  But
feeling good feels so good that I never knowingly eat gluten.  My husband
loves this diet and says he has also felt better since eating gf.  Also I
know I would never eat this healthy were I not forced to.

I agree with what Mirielle says, the key is to have no gluten in the house.
I realize that for some people this is not possible or does not look doable
but IT IS.  It is more expensive but once you get on to it you can stretch
the food budget.  I would urge anyone who has not tried a gf kitchen to try
it, it will save you alot of work and stress and your whole family will be
healthier as a result!
