Last year, when my son started 1st grade at a new school, I made sure that at every class party, the snack table had a platter of something really good and GLUTEN-FREE. Fancy sugar cookies, mint brownies, cookie bars - something that looked like "normal" kids' snacks, but tasted better. ;-)

Well, today is the 2nd grade kick-off party. Yesterday as soon the carpool dropped off my son, he announced "Mom, 2nd grade voted and they want your mint brownies for the party tomorrow."

Yes, every single kid in the class knows the brownies are "different" (most of them probably don't actually understand gluten-free despite my son's best efforts at educating them on that ;-) ) BUT they know the brownies are good and that's why they asked for them.

SCORE ONE FOR GLUTEN-FREE!

And before I get 20 emails for the mint brownie recipe, here it is:

1 bag Namaste Brownie Mix 
1/3 c. applesauce
2/3 c. oil
3 eggs
1/2 c. water

Combine all the liquids and mix well. Gently stir in the mix until it is all moistened, but do not overmix. Bake according to package directions in a greased 9 x 13 inch pan.

2 minutes before the brownie should be done, click the oven setting from "bake" to "broil." Test the brownies with a toothpick; if they are close to done, remove the brownies from the oven, and dump 1 bag of Nestle Mint Swirl Chips* over (and perhaps a few extra plain chips). Put the brownies back in the hot oven for about 2.5 minutes more, watching closely so the chocolate does not burn.

When you take the brownies from the oven next, IMMEDIATELY spread the melted chocolate all over them to resemble frosting. Use a wide bladed knife or narrow spatula to spread the chocolate. Let cool completely before cutting.


* these chips are made on shared equipment with wheat and nuts. howver, I have talked to Nestle about their cleaning, and feel comfortable about it. We use them often, and neither celiac here reacts to them. Make your own choice based on your sensitivity level.
