Hi Everyone!

I got a phone call today as I was finishing up work.  It was from a woman 
who had just purchased my cookbook at the store...and she was calling to 
thank me for writing the cookbook!  What a great way to end the day.  I 
went home and made dinner for my family and I want to share the recipe

*****   ORANGE AND GINGER SALMON	 	

 	4 (6 ounce) salmon fillets (1-inch thick), skinned	 
 	1 cup orange juice	 
 	1 tablespoon San-J Tamari wheat free soy sauce	 
 	2 teaspoons finely chopped peeled fresh ginger	 
 	1 teaspoon Maille Dijon style mustard	 
 	1 tablespoon extra light olive oil
	 
 	To make marinade, combine orange juice, soy sauce, ginger, and 
mustard in a small bowl. Place fish in a shallow baking dish. Pour 1/2 of 
the marinade over the fish. Cover and refrigerate 45 minutes.

Heat oil in a nonstick skillet over medium heat. Cook salmon, covered, 7 
minutes. Turn salmon over; add reserved marinade. Cover, and cook until 
salmon is cooked through, about 4 minutes. Serves 4.
