After reading the post about the gf menu available in Phoenix/Tempe area
I contacted our local Z Tejas and spoke with the master chef for all
their restaurants.  A few of the items are different on the local
(Austin) menu.

                                   GF MENU FOR AUSTIN AREA RESTAURANTS**
Starters
GRILLED QUESADILLAS*- your choice of smoked chicken, pork, or vegetables
stuffed in a (*substituted for flour) corn tortilla with jack cheese,
bell peppers and onions.  Garnished with tomatillo sauce and chipotle
cream   6.75
FISH TACOS*-seared catfish (*must tell them to leave out the tortilla
strips), with avocado and cucumber slaw in a (*substituted for flour)
corn tortilla   7.25

Soups and Salads
GRILLED FISH SALAD-tender grilled ruby trout, spicy walnuts and goat
cheese on greens tossed in a sundried tomato basil vinaigrette   8.95
SMOKED CHICKEN BLACK BEAN SALAD-home smoked chicken, black beans and
colored peppers tossed in a lime vinaigrette, topped with roasted pumpkin
and sesame seeds and goat cheese  7.95
Z'GREEN SALAD*-mixed greens, colored peppers, roma tomatoes (*must omit
the Navajo croutons).  With choice of spicy basil-parmesan (has a white
vinegar), tomato basil, sesame ginger or lime vinaigrette dressing   3.95
SOUTHWESTERN CAESAR*-hearty romaine (*omit Navajo croutons) and a spicy
basil-parmesan dressing (has a white vinegar)  4.95     with chicken
7.95     with grilled trout  8.25

Lunch Specials
TUNA SALAD*-seared Ahi tuna over a bed of mixed greens served with a lime
vinaigrette, tomatoes, crispy capers and a zap of wasabi (*vinegar)   8.95
SANTA FE CHICKEN ENCHILADA-not allowed unless you want them to omit the
Red Chili Sauce which has a roux base   7.95
GRILLED CHICKEN FAJITAS*-a pineapple-orange marinade with onions and
peppers.  Served with mixed cheese, sour cream, salsa fresca and
guacamole.  (*Must request corn tortillas)     8.95
GRILLED RUBY TROUT-rubbed with cilantro pesto, then topped with avocado
relish.  Served with Southwestern rice and mixed vegetables (rice is
cooked in water)    7.95

Dinner Specials
SMOKED CHICKEN CORN ENCHILADAS-with mole verde sauce and jack cheese.
Served with southwestern rice and black beans            8.95
CAJUN STUFFED CHICKEN-tender breast of chicken stuffed with crabmeat,
roasted peppers and jack cheese.  Topped with cajun cream sauce.  Served
with wild rice, corn custard and mixed vegetables.     12.95
GORGONZOLA  N.Y. STRIP*-grilled N.Y. strip (*must omit sauce), served
with green beans and a seared mashed potato cake       16.95
SMOTHERED BEEF TENDERLOIN* -filet mignon (*must omit sauce), with mashed
potatoes and green beans    17.95
MISO GLAZED SALMON*-fresh king salmon brushed with a miso glaze (*must
omit butter sauce), served over green beans and a mashed potato cake

GRILLED RUBY TROUT-fresh filet grilled and topped with avocado relish.
Served with wild rice, corn custard and mixed vegetables        9.95
ROASTED PORK ENCHILADAS*-shredded pork roast with mole sauce and jack
cheese.  Served with Southwestern rice and black beans (*order with corn
tortillas instead of flour)         8.25
WILD MUSHROOM ENCHILADAS-sauteed wild mushrooms, avocado salsa and jack
cheese topped with ancho sauce.  Served with S.W. rice and black beans
       8.75
PORK ROAST VERA CRUZ*-tender pork roast, barbecue style with ancho chiles
and onions, served with southwestern rice and black beans. (*Must
substitute corn tortilla for flour tortilla)    9.25
VOO DOO TUNA*-blackened tuna with black peppercorn vinaigrette (*must
omit the spicy soy mustard). With southwestern rice and mixed vegetables
      10.95

**All items reviewed with Z Tejas management in August and on October 4,
2000.  Since food producers change ingredient contents, and chefs can be
creative,  ALWAYS double check with your waiter.  If an item you want is
not listed here, it has been omitted due to flour roux, wheat gluten,
msg, gluten base or cross-contamination.  Vinegar has been noted.
FYI--rice cooked in water, moles shown cooked with vegetable oils.
