We have a cheese factory close to our home that you can buy directly
from, like cheese curds, block cheese, etc.

I'm wondering what I should be looking for in order to tell if I can
have any of their products.  I called them and they didn't think
anything would have gluten in it, but they weren't sure.  The girl I
talked to said everything was "fresh" and they don't add anything to the
cheese to make it "last" like some of the shredded cheese and the like
on the shelves in the store.
