In our area (Alberta, Canada) the ice creams the are RIPPLE, ie Strawberry
ripple have modified food starch as the binder for the ripple portion.  I
find it easier to stick to the vanilla, strawberry, chocolate flavours and
add our own toppings that are known to be GF.  I did not contact the
manufacturer of the ice cream to find out if the starch was GF but just use
strawberry jam on the ice cream for the ripple effect.  Since I don't have
the time to question every product that is not clear in the ingredient list
I just adapt foods that are clearly GF.
