Taco dip: philly cream cheese, layered with a jar of salsa, and
shredded sharp cheddar or mexican blend on top. Heat in microwave
or oven until bubbly and serve with tortilla chips. Huge hit!
Another favorite is a ham or pepperoni chees dip that you can serve
with Gf crackers or corn chips. The recipe is actually on the Ritz
Cracker box. It's just cream cheese, shredded cheddar and smoked ham
or pepperoni, baked in the oven til bubbly.

tortilla soup, chicken enchilada soup and salad angel food cake with
fruit and whipping cream for dessert

For the cake you can use Gluten Free Pantry Angel food mix

Recipe for tortialla soup:

2 ½ to 3 lbs. of boneless, skinless chicken breasts
6 cups of chicken broth (or bouillon in water)
1 large yellow onion, chopped
1 large red bell pepper, julienne
6 cloves of garlic, minced
2 Tablespoons of olive oil
1 28 oz. can of Rotel (diced tomatoes and chilies)
2 14 oz. cans of Bush’s black beans
2 Tablespoons of Worcestershire sauce
1 teaspoon cumin powder
2 teaspoons chili powder
½ teaspoon fresh ground pepper
¼ teaspoon red pepper (cayenne)
1 bunch of green onions, chopped
1 bunch of fresh cilantro, chopped

Tortilla Chips
Finely grated mozzarella cheese

1.	Bring chicken and broth to a boil. Once it comes to a boil,
cover and turn down to a simmer for 45 minutes. Note: Don’t overcook
because the chicken will cook more in the soup.
2.	Once chicken is cooked, chop chicken in chucks and keep the
broth off to the side in a bowl.
3.	In a large stock pot, sauté onion, red bell pepper, and garlic
in oil.
4.	Once onions are relatively clear, add the Rotel, black beans,
Worcestershire sauce, and seasonings.
5.	Add left over chicken broth
6.	Add green onions and a generous amount of cilantro.
7.	Cover and simmer for 30 minutes (stir occasionally)
8.	Add chopped chicken, cover and simmer for another 30 minutes
(stir occasionally)
9.	Ladle soup into a bowl, top with cheese and serve with chips on
the side.

Regarding themes, the following were suggested:

Japanese food for an Asian theme

Give your own Oscar's! One for the best outfit (vintage, maybe), one
for
the best 'Star' quality. (overly effected, of course), one for the best
gluten-free dish that is there. Your friends might really get into
it and
have to do a little research to make something. You could add others
for
....whatever, but your acceptance speeches would be a riot!

Dress as characters from nominated movies, or old classics!

Thanks again!

Sue
