I have it hanging "framed" from an artist in the French Quarter in New Orleans - 1985.  Hadn't made it since I was diagnosed in 1991.

Breading Pudding 
 
1 Pkg Udi's hot buns (dried out for a couple of days)  5 6 - 8 cups gluten free bread
4 cups milk (or 1/2 milk/1/2 heavy cream) - I used about 1/4 cup cream
1 stick butter, melted and cooled
3 eggs
1 Tbsp vanilla
1 cup pecans (I omitted)
1 tsp. cinnamon
1/2 tsp nutmeg
1 cup raisins (I used dried cranberries)
1 cup sugar (I'd use a little less next time)

Combine all ingredients (beat eggs, added cooled melted butter) and rest of ingredients.  Let it set for a few minutes to let the bread soak up the wet ingredients.  Pour into buttered dish  (I sprinkled additional cinnamon on top and bake at 350 for approximately 1 hr 15 min until golden brown.  Serve warm.

Serve with brandy sauce
