Not wishing to open up another can-of-worms today, I notice the
references to wheat-allergies rather than intolerance to wheat.

I believe a food intolerance results from the inability to produce
the enzyme to break down the food, whereas an allergy causes the
body to create an antibody to fight it

I think I am 'wheat and gluten' intolerant rather than allergic to wheat
and gluten.  N'est-ce-pas?
