I thought I would share this recipe, my favorite, adapted from King 
Arthur Catalog recipe.

Banana Muffins
1/2 cup yogurt ( I use Silk plain from Whole Foods )
l large egg plus an extra yolk
1/4 cup oil  (canola or other)
l 1/2 cup mashed banana ( be sure to measure)
3/4 cup sugar
l cup rice bran (ener-g foods carries it.)
l l/2 cup flour ( I use Annalise Roberts mixture, other mixtures would work)
4 tsps baking powder
l tsp xanthan gum
1/2 tsp salt
l l/4 tsp baking soda
1/4 tsp cinnamon

Topping
1/4 cup brown sugar
1/4 cup rolled oats  certified oats
2 TBs flour GF
1/4 tsp cinnamon
l TB soft butter or dairy free butter
Mix this in a bowl, cutting in the butter. Works well with hands.

Combine the yogurt, egg, oil, banana, sugar and rice bran in a bowl, 
large bowl. Whisk and set aside.
Whisk together the flour, baking powder, salt, baking soda and cinnamon.
Mix the banana mixture gently into the dry ingredients then spoon into 
muffin tins. Sprinkle with the topping and bake
in preheated 375 degree oven about 30 min.  Remove from tin onto rack to 
cool.  They freeze very well.
Makes about 12 regular size muffins.
