Agar Agar flakes are used as gelatin by people who wish to avoid animal
products.  They are derived from sea vegetables, are gluten free, and
have much better firming than pectin.

You can find Agar Agar flakes at most natural foods supermarkets.
(They are also called Kanten flakes)
