Mr. Kasarda:

The very strict dietary restrictions followed by celiac patients are
often related to the extreme level of sickness experienced prior
to diagnosis.  Futhermore, inconclusive evidence exists that a diet
totally free of gliadin may reduce the increased incidence of cancer
experienced by persons with celiac sprue disease.  Even if there is
only a remote possibilty (alcohol, distilled vinegar) that a
substance contains gliadin, I avoid it.
