GIG 2002 Annual Education Conference
June 21-23, 2002
Winston-Salem, North Carolina, Adams Mark Hotel

The Gluten Intolerance Group with Wake Forest University and North
Carolina GIG Partners Proudly presents GIG 2002 Annual Education
Conference, June 21-23, 2002 in Winston-Salem, North Carolina at the
Adams Mark Hotel.

This 2-1/2 day program offers something for everyone, even the kids,
from experts in the field of celiac disease.

June 21 - Friday afternoon will feature 4 optional 3-hour programs:

1. Celiac Clinic - A program designed to provide basic education for
newly diagnosed persons and those wanting a refresher. Qualified
dietitians and a nurse will provide an overview of gluten intolerance,
and the diet. This course will provide the most in-depth information
about the gluten-free diet at this conference. Health screenings are
part of this course.

2. Whole Foods Shopping tour and Cooking Demonstration - Beth Hillson,
from Gluten Free Pantry and Jay Berger from Miss Robens will discuss
problem-solving cooking failures and reduced fat, sugar, and dairy free
cooking. Dietitians will give tours of the store, teaching participants
how to read labels and shop gluten free.

3. Cooking Demonstrations at the Career Center Commercial Foods Kitchen
-two of the best gluten-free authors (Bette Hagman - the Gluten Free
Gourmet and Carol Fenster - Savory Palate) partner with a local chef to
present cooking with alternative seeds and grains, desserts, and
ingredient substitutions.

4. Chefs Cook at the XXX Station - Highly trained Chefs will show you
how to prepare elegant meals - gluten-free. Friday evening will conclude
with a reception in the exhibit hall, where exhibitors will showcase
their products to you and medical personnel attending a professional
program.

Saturday and Sunday will feature health screenings by Novanth Medical;
exhibits and programs, not to be missed. Topics include:

* Care After Diagnosis - Dr. J Murray

* Women's Health Issues - Dr. C. Rudert

* Dentistry - Dr. C. Hylton

* Working with the Pharmacist - S. Plogsted, PharmD.

* Advocating our Cause - Making Our Message Count - K. Holcombe,
        Professional Advocate

* Adult Challenges with the Gluten Free Diet - Heart Disease, Weight
        Control, and Osteoporosis - S. Britton, RD

* Working with your health care team for success - Dr. Gill

* The Differences in Celiac Disease in Kids and Adults - Dr. I. Hill

* Being Vegetarian on a Gluten Free Diet - A. Yoder, RD

* Food Allergies and Gluten Free - M.K. Sharrett, RD

* Plus other topics, special surprises and laughs! You won't want to
        miss this one!!

Let's Not Forget the Kids! Welcome to GIG Kid's Day Camp! GIG Kids Day
Camp is a 2-day program. Kids will learn about living gluten free
through games and hands-on activities. They will make a "Stash Box" for
those special treats at school or other places. Watch them trick-r-treat
the vendors in their masks and hats. Nutrition games and activities,
'kid food', and don't forget the pool party. Educators will include
dietitians. Care providers will be professionals experienced in working
with children. All persons working with children will be screened
through the North Carolina Sex Offender Screening Program.

Conference registration fees include participant materials and breakfast
and lunch meals prepared to perfection by the Adams Mark Chef and GF
Baker - Lee Tobin (Whole Foods). The Adams Mark Hotel is offering a
discount room rate for the conference.

Saturday Evening is always a special time for those who choose to attend
our Banquet. The meal is excellent, the entertainment wonderful, and the
company unforgettable. We hope you will join us for our 'Pennies from
Heaven' Banquet.

Watch for program brochures to arrive soon. In April, registration will
also be available on the GIG website - www.gluten.net. Space is limited
in the Friday courses, so register early.
