Hello nice people,

I think I am too sensitive to anything what touch gluten. In this days
there is many products available claimed “gluten free”. Most people are
happy and enjoy thos wonderful tasty products. I bought few times GF flours
which ended up in garbage, because I’ve reaction; sometimes just light but
many times bad one. Perhaps that 20 parts per million does not agree with
my system. Luckily, I owe good stone; grain mill to prepare my own flour
with grains what I chose. To have good pasta, I bought recently few
packages; Catelli Gluten Free pasta. First time was without major reaction,
just little constipation. However in couple of days I had big bowel of
pasta with good homemade sauce and mozzarella cheese. I’ve got punished. I
had bad stomach pain whole next night. It takes me about seven days for me
to recover.

Am I only on the earth to be so sensitive to so called gluten free
products?

Perhaps Dr. Fasano’s statement is right: Human digestion system is not able
to digest gluten. I accept that and I am living prove for that. I see many
people suffering with health problem. They claim that gluten is not their
problem. Perhaps they are mistaken.

I will appreciate your comment which I will summarize.
