Hi,

I'm desperate for some quick advice on cake baking.  Before going gf I enjoyed making and decorating cakes for every occasion.  Yesterday, I bombed making Carol Fenster's Basic Cake from her book Special Diet Celebrations.  My daughter's party is tomorrow, so I don't have a lot of time to read through the archives to figure out what I'm doing wrong.  

Are there any secret techniques to getting a gf cake to rise?  My 8" cakes are about 1" high, too short to make a normal looking b'day cake.  I'm thinking of making another 2 layers and having a 4 layer cake.  Is this what life has come to as a gf baker?  I'm almost inclined to make a gluten cake for show and for the other kids to eat, and serve my daughter her own gf piece.  But, I know she would be disappointed (and feel left out).  I should mention that I followed the cake recipe exactly and that I used damp fabric around the cake pans so that the edges wouldn't burn before the center was cooked (a trick I learned from my aunt so there's no hump in the middle of the cake).
