Earlier this week, I posted that I bought the Yehuda matzah-style "crackers"...their description. They are the size of regular size pieces of matzah.

I just tried to make matzah brei with them. Delicious, authentic......

For those who never tried it, it's nothing more than matzah dipped in beaten eggs and lightly fried in a small bit of hot oil in a frying pan. I pour the extra beaten egg over the matzah in the pan.  Cook as you would scrambled or fried eggs, except when I make plain eggs, I use butter, not oil.  With regular matzah, the kind made out of wheat, I used to dip the matzah in water first...Have no clue why. But I think the egg will stick to the gf matzah better, if you don't. The Yehuda matzah has a slightly salty taste, so don't add a lot of salt, if any. I use it lightly at the table, not in my cooking.

I'm not accustomed to eating fried, greasy foods anymore. But at least, once a year, for Passover, I now have an option. 

I imagine this product will work well in other matzah type recipes.  If it held up to Matzah brei, it should hold up to anything.

(Passover doesn't start until April 19th, but I couldn't resist.)  Somewhere, I have Yehuda's email address. I'm going to write to them.  And then I'm going out to Shop-RIte to buy another box.
