I'm a little concerned over many comments by celiacs as reflected in
summaries lately.  My concern lies mostly for persons newly diagnosed on
this listservice.

For some celiacs apparently the "try it and see if you react" thought
process seems to prevail.  My understanding of this disease is that whether
or not you "react" your small intestine is damaged by ingestion of gluten.
Period.  I do not willing ingest gluten and feel that the once a year or two
year "poisoning" that nails me at the hands of others is besides being
extremely uncomfortable a very bad thing for my well-being.  I realize there
is the old gluten challenge that some doctors inflict in trying to diagnose
the disease, but once on the road to health why would anyone continue to
ingest gluten just to see if a food is GF or not?
