Greetings folks ...

I'm currently writing a story for a local newspaper about cooking for
folks who are wheat intolerant/allergic. Naturally Celiac figures into
this story in a big way. I'm looking for a handful of folks from
Northeast Ohio who are willing to share their stories of discovery and
some of their very best tips for cooking/baking/dining out. Naturally,
I'm looking for the obvious tips to initiate newcomers, but also for
some of the unusual things you've discovered that could be helpful.
(Like, in my family, I make and freeze gluten-free pancakes. Then, I
thaw them and use them to make sandwiches for my son. Afterall, he hates
the gluten-free breads, but pancakes make great sandwiches!)

I'm hoping to find someone who's found that autism symptoms improve on
the "diet" ... as my source at the Cleveland Clinic denies any
scientific link to autism. Of course, I'm looking for someone willing to
share their story. I know someone with a story but who doesn't want
anyone to draw attention to the child.
