I needed a flour mix that was affordable.  Some of the bought mixes are really great, and in the cookbooks too.  But all of these flours can weigh on our checkbook.  So I tried this and it works great.  Occassionally I use the others too.

2 cups sweet rice flour
2 cups white rice flour
1/2 cup corn starch

Waffles that my kids adore.

2 cups flour mix (have also used Hagman's featherlight mix and did wonderful too)
3 tsp baking powder
1/2 tsp salt
3 Tbsp sugar (I use powdered sugar)
1 tsp powdered vanilla
3 eggs separated
4 Tbsp butter melted
1 to 1 1/2 cups of milk or substitute.  Judge by thickness of batter before you add the eggwhites. My amount changes every now and then alittle.

Mix dry ingredients and set aside.  Beat egg whites until white and stiff.  Mix egg yolks, butter, and milk well with the flour mix.  Fold in whites.  You want the batter to be thin enough to pour but thicker than pancake batter. Like a thick cake batter.  Cook according to waffle iron instructions.  Makes about 5 waffles.
