Thanks to everyone who responded!
   
  I've heard from, and of, 24 individuals who have been taking the low-gluten wafer for anywhere from a few months to a few years and have had no reaction.  Six people have had follow-up blood work that was also negative.  Two reported that they take less than a full wafer with each communion and several take precautions to ensure that the wafer is not contaminated through contact (separate pyx or paten).  
   
  One individual had a severe migraine after ingesting the GF wafer.  The migraine didn't seem to be attributable to anything else, and he had not had one since going GF.  : (
   
  One person suggested that the Ener-G communion wafer would be a better option since it is GF.  That won't work for Roman Catholics, though, or for people who react to soy.
