On a recent post, there was a comment 'Cocoa processed with alkali is
also to be avoided according to CSA.'
I searched the archives and couldn't find any info on this.  This is
something that I haven't heard before. Can someone explain to me what
alkali is and why this is to be avoided? I know that I have called
Smuckers not too long ago about the GF status of their Magic Shell
toppings.  I was told that some of them were GF (I was only interested
in the Chocolate Fudge one) but yet when I look at the label is says
cocoa processed with alkali.  Was I misled?? I am sure that I have seen
cocoa processed with alkali on other items believed to be GF. Thanks for
any info.
