Many thanks to all who responded to my question - 45 replies in all!  The=

consensus is that a square of chocolate weighs 1oz or 28g.   This was
confirmed by Don Wiss who very kindly phoned Bette Hagman.

Also some listmembers suggested that you can substitute 3 tablespoons of
cocoa together with one tablespoon of shortening.

To all those concerned about converting the weight to metric - I haven't
yet caught up with the EU and still use pounds and ounces!
