I haven't tried making GF gingerbread for houses, sut you might try
modifying Bette Hagman's Mock Graham Cracker recipe in "More from the
Gluten-Free Gourmet".  This recipe makes fairly sturdy cookies.  You
could change the honey to molasses and add some ginger and other spices
to make it more like gingerbread.
