As a newly diagnosed celiac who visited England over Christmas, I am aware
that in Europe celiacs are "allowed foods with up to 3% gluten content". I
have been wondering if celiacs in Europe have more complications, e.g.
stomach lymphoma, and do their follow up biopsies show villi unhealed after
following the gluten restrcited diet v gluten free? It is hard to believe the
different schools of thought - I called the U.K. Coeliac Society to ask about
the Wheat Starch in the "Glutne Free" bread, and was told it is fine to eat!
This bread was incidentally available on prescription. Looking forward to
receiving your input
