hello

thank you to all who responded to my query re finding potato starch in
australia.

a lot of people suggested i look in jewish grocery stores as potato
starch is used in jewish foods for passover.

others suggested i try oriental grocery stores.

some people explained potato starch as being similar to corn starch -
white and very silky in texture, with potato flour being a yellowish
colour and quite grainy.

i managed to find potato starch in an oriental grocery store - yeh!

comparing the potato starch to potato flour, i discovered they are the
same thing!  it would appear that in australia what we call potato flour
is called potato starch in america. the potato flour found in america is
apparently similar to ground dehydrated potatoes/potato flakes (as
explained by a few responses to my query).

i have since tried the pita bread recipe, using potato starch and
substituting soy flour for the potato flour. it was delicious!
