The Cooperative Extension Office in Fort Collins is run by Colorado State
University.  They do carry some info on GF cooking and high altitude
adjustments.   The phone number is

Also, the Denver Metro Chapter of CSA has compiled a wonderful high altitude
GF cookbook.  It is a mainstay in my house. Contact the Denver Metro Chapter
to order a copy.
