Hi List,  Here's a recipe I obtained many years ago from a dear Itialian
friend.  His sausage was always in demand by his friends, an us.  He has
passed on now, but his recipe remains.  Enjoy!  (Yes, it's GF).

1 lb corse ground pork butt
1 1/2 tsp salt
1/2 tsp corse ground black pepper
1 1/4 tsp (rounded) fennel seed
1 tsp (rounded) paprika
1 tsp anise seed
1 tsp (rounded) grated orange peel
garlic powder to taste (Start with 1/4 tsp and work up)

To make hot sausage, add 1/4 tsp red pepper flakes.

The recipe is for one pound, and can be increased proportionately as needed.

This is great with acron squash.  Hope you try it.
