It has been pointed out to me that most cookbooks give a ratio of 1 part
basmati rice to 2 parts water and to cover the pot with a lid after
turning the heat down to a simmer. I cook on an old propane gas stove
and have found that 2 parts of water is not enough to get the rice done
without burning and since I don't have nice heavy-bottomed pots or a
flame retarder (or whatever they are called) that sits under the pot, I
have to leave the top off to get the simmer low enough. Sorry for any
confusion.
