Dear fellow recovering Celiacs still having stomach reactions like me from
even GF foods and elevated appetite- This quote has given me a little more
mental and physical control over my stomach acid symptoms by understanding
more about the phases of gastric acid secretion.

Disease A Month medical journal published an article called
"Maldigestion and Malabsorption" in DM, Feb. 2001: "Secretion of gastric
acid is stimulated at 3 levels.  The cephalic phase, which is atrophine-
sensitive, occurs with sight, smell, or even thought of food.  The
gastric phase involves both vagal stimulation and gastrin release and is
triggered by gastric distention and by chemical stimuli, such as peptic
digests, ethanol, coffee (even decaffeinated coffee), and calcium.  The
intestinal phase is mediated by distention and proteins".
