SUMMARY OF RESPONSES - modified food starch.

"In Canada it means 5% wheat starch."
"No known law regarding what food starch must be...generally...means
wheat starch--corn, the other primary option...is more expensive."
"This is a term used for what ever is cheapest at the time...could be
anything."

BOTTOM LINE - call the company and inquire if their product is
something  you especially like.
