Re the question on colleges which will make gluten-free meals:
Our daughter attended Bowdoin College in Brunswick, Maine for 1 1/2 years and
their wonderful staff made a completely gluten-free menu for her. All their
food is from scratch and the food service is immaculate and well-organized.
The saint who heads the food service is Mrs. Mary Kennedy, Director of Dining
Service, Bowdoin College, Brunswick ME 04011 (207/725-3067). A friend of mine
who is a past president of ADA has nominated her for their "Compassionate
Care-Giver Award" because of all she did. I provided her with lots of GF
information, a notebook of resources and a resourceful student who
understandings cooking; Mrs. Kennedy trained her staff.
There is also an excellent health food store in town, Morning Glory foods.
Bowdoin is a small New England school with very high academic standards, so
your smart student must like cold weather and New England. Our daughter
ultimately decided to return to the Midwest and is now old enough to live in
an apartment and do her own cooking.
