Cheese and Sausage Pasta Bake
4 slices bacon
1 1/2  lb. turkey sausage
1 large onion, chopped
1 tsp. dried thyme crumbled
1 tsp. dried rosemary, crumbled
12-oz. bag. tri-colored spiral pasta (#437), cooked al dente, drained and
rinsed with cold water
2 large carrots, peeled, thinly sliced, steamed for 3 minutes
2 cups broccoli florets, steamed for 3 minutes
6 oz. package of reduced-fat garlic and herb cheese, room temperature
1/2  cup evaporated skim milk
1 cup gluten-free chicken broth
1 cup grated Monterey Jack cheese (reduced -fat cheese is fine)
3/4 cup crumbled blue cheese
1, 28-oz can Italian plum tomatoes, drained and chopped
1/2  cup grated Parmesan cheese
salt and pepper to taste

Cook bacon and sausage in heavy skillet until bacon is crisp.  Drain bacon
on paper towel.  Finish baking sausage in 375  degree oven, cool and slice.
Sauté onion in bacon fat or olive oil.  Add spices and cook 2 minutes.
Preheat oven to 400 degrees.  Butter a 9-x-13 inch baking dish.   Combine
herbed cheese, milk, and chicken broth.  Add pasta, vegetables, onion
mixture, sausage and bacon.  Fold in Jack and blue cheese, tomatoes and half
of the Parmesan cheese.  Check seasonings.  Transfer to pan.  Top with
remaining Parmesan cheese.  (Can be prepared to this point one day ahead.)
Cover with aluminum foil and bake 30- 40 minutes.  Serves 6-8.
