Thank you to everyone who replied to my question about the risks of ingesting gluten from particles in the air (when the hay is from wheat and barley) at hay rides and mazes. 

Overall, it seems that hay rides are safe for celiacs. I've learned that the grains of wheat and barley are removed during processing, meaning, the gluten containing part of the wheat has been harvested. The remaining straw is a by-product which is supposed to be gluten free. Many people reported that they have never had a problem, with only one person responding that her child gets a rash. Another spoke of allergy reactions (like hayfever). 

Other suggestions included washing hands after participating, no hands in the mouth, sitting in the front during the hayride to limit the dust particles, using surgical masks or just not going on the field trip.
