I've just come across "nata de coco" listed as an ingredient in packaged
tropical fruit puddings from Malaysia. All I've been able to find out about
this ingredient is that it's a coconut derivative, mainly produced in the
Philippines, and it's processed by some method involving acid.

Does anyone know if nata de coco is GF? It seems likely, but I'd like to
know for sure.

Eleanor
