I have some recipes that call for something like a Cheez Whiz or
Velveeta type product.  Although it has a little bite, which I like,
Pace Picante Con Queso is a good substitute and according to Pace, is
gluten-free.  I've called Pace twice and they said all of their Pace
products are gluten-free.

I hope this helps anyone else looking for this type of cheese.
