I wrote to Bonefish Grill to ask when they apply the sauces, since the Asian one is not gf. Other sauces are.

Here's the reply.

We apply the sauce after it has been grilled and plated, so that should not be a concern.

A couple of people did write to me to say they've been glutened at Bonefish, including a group of people with celiac who made arrangements in advance. Such is the risk anywhere.
