I have used a Panasonic bread machine, very basic model under $100, for about
two years now. I also use a Kitchenaid Mixer. I start the bread machine and
let it run through the first part of the cycle while I mix the bread in the
Kitchenaid. When the bread machine beeps at the second rising time, I load
the pan with the dough into it and let the bread machine take it from there.
It's no trouble to let the dough sit in the pan on the counter for a while,
and I find that the mixer does a much better job of stirring the ingredients
without breaking my arm *helping* the bread machine paddle.

I use the recipes in the Red Star Yeast booklet. The mixes from EnerG are
very good but overflow my pan, so I sometimes use them in half quantities.
